Yakhni Sabanekh Ma Hummus

Spinach and Chick Pea Stew

This was always one of my favorite dishes growing up. It’s really easy to make, filling, and delicious with a lot of fresh spring flavors.


Makes 6 servings
  • Fresh Spinach
    • 12 oz
  • Yellow onion
    • 1 medium
  • Canned chick peas
    • 1 can
  • Vegetable oil
    • About a tablespoon for the stew, another two tablespoons for the noodles and rice.
  • Salt and pepper
    • To taste
  • Fresh lemon juice
    • 1 lemon
  • Rice
    • 3 cups cooked


  1. Dice the onion.
  2. Heat the oil in a large pot.
  3. Sauté the onion until translucent.
  4. Chop the spinach and add to the pot.
  5. Salt and pepper the mixture.
  6. Add a whole can of chick peas to the stew, including the liquid.
  7. Add water to cover everything
  8. Simmer for 25 minutes.
  9. To serve, lade some of the stew on top of rice (see the recipe for Ruz) with as much lemon juice as you like.
